Tuesdays With Dorie...Kinda

Ok so I don't know if I really should be calling this Tuesdays With Dorie this week because although I made corn muffins, I made the ones on page 4 instead of the Savory Corn and Pepper Muffins on page 6. Did I make the wrong ones by accident? Nope. I made these a few days before the January recipes were announced. Since nobody in my family really eats corn muffins, I didn't want to make another dozen. Plus I couldn't cut the recipe in half because it involves 1 egg yolk (unless somebody has a solution?). Really, the difference is these don't use peppers or buttermilk.

The recipes are basically the same, except for the added spice.

The chili powder and other stuff gave it extra flavor but your muffins look really tasty too!

Sometimes I don't think the egg thing matters too much. I think it's ok to just throw the other half in or just scoop half out with a scoon and dump it (although that would be wasting!). An extra bit of egg yolk might add some moisture! I like the corn nibblets that you added. Maybe that would have made me like these a little more.

Are you sure you're gonna skip out next week? Maybe you can make them without the berries. I don't think I can buy any berries that would even taste good at this time of year. Maybe half the recipe so it's not so much cake or make cupcakes?! The technique seems different and I'm kinda excited although a little scared to try it out. I hate folding!!

And Carla, I'm so jealous you live so close to Le Gourmet Chef.. I love that place. The Nordicware pans are such a great buy there, can you believe it costs like 40-50 here just for a bundt pan!! And the selection of OXO and Microplane. If I could, I probably would buy every grater b/c they're all so cool!!

The technique for next week's cake is pretty interesting. So you could just make that and do something cool with it or freeze it for later. I think you could use frozen berries, or whatever fruit is on special. I bought blueberries today for 99 cents.
